Elevate grandma's candied yams with juicy canned pineapple and gooey marshmallow topping.
Ingredients:
  • 0.25 cup unsalted butter
  • 0.5 cup pineapple juice
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 (29 ounce) cans cut yams, drained
  • 1 (8 ounce) can pineapple chunks, drained
  • 1.5 cups miniature marshmallows
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a saucepan over gentle heat, melt butter. Add pineapple juice, white sugar, brown sugar, cinnamon, and nutmeg. Stir together and cook until sugars dissolve, approximately 2 to 3 minutes.
  • Place the drained yams and pineapple chunks in a casserole dish, then generously pour the sauce over them.
  • Once placed in the preheated oven for one hour, sprinkle marshmallows on top and bake until they turn golden and melted, which should take an additional 10 to 15 minutes. Allow the dish to rest for 15 minutes before serving to ensure the sauce thickens perfectly.
