Easy and traditional date bars with oat crust and crunchy topping.
Ingredients:
  • 1.5 cups quick-cooking oats
  • 1.25 cups brown sugar
  • 1 teaspoon baking powder
  • 0.75 cup butter
  • 0.5 pound dates, pitted and chopped
  • 0.75 cup water
  • 1 tablespoon vanilla extract
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine oats, flour, brown sugar, baking soda, and baking powder in a bowl. Use a pastry blender to cut in the butter until mixture is crumbly with small butter pieces evenly distributed.
  • Evenly press half of the oat mixture into a 9x13-inch baking pan.
  • Simmer dates in water until soft and easily mashed, about 10 minutes. Remove from heat and stir in vanilla extract.
  • Evenly spread the date mixture over the oat mixture in the baking pan, then sprinkle the remaining oat mixture on top and press it down firmly.
  • Bake until the crust is golden at the edges, about 30 minutes in the preheated oven. Let it cool completely on a wire rack before cutting into bars.
