Grandpa's Garden Chicken Soup

A hearty and flavorful chicken soup with a variety of vegetables, perfect for a cozy meal. Customizable and simmered to perfection.
Ingredients:
  • 1 whole chicken, quartered
  • 2 quarts water, or as needed to cover
  • 0.5 large onion, chopped
  • 1 stalk celery with leaves, cut into chunks
  • 0.25 cup chopped fresh basil
  • 0.25 cup chopped fresh parsley
  • 3 cubes chicken bouillon
  • 1 tablespoon chopped garlic
  • 2 medium Yukon Gold potatoes
  • 2 kohlrabi bulbs
  • 1 large turnip
  • 2 medium carrots
  • 0.5 medium head cabbage
  • 1 medium tomato
  • 4 ounces fresh green beans
  • 2 ears sweet corn
Instructions:
  • In a large stockpot, combine chicken pieces with enough water to fully cover them. Add onion, celery, basil, parsley, bouillon, garlic, salt, and pepper. Bring to a gentle simmer over medium-high heat. Let it simmer gently until the chicken is fully cooked and the juices run clear, about 1 hour. To check doneness, use an instant-read thermometer near the bone - it should read 165 degrees F (74 degrees C).
  • Peel and dice potatoes, kohlrabi, and turnip, then slice carrots. Combine all vegetables in a bowl.
  • Prepare the cabbage and tomato by coring and chopping them. Trim the green beans and cut them into 1-inch pieces. Remove the corn kernels from the cobs and combine all the vegetables in a separate bowl.
  • Once the chicken is done, discard celery chunks, transfer chicken to a cutting board, and let it cool for 5 minutes. Remove as much meat as you can from the bones, chop it roughly, and return it to the stockpot.
  • Combine the first bowl of vegetables, including potatoes, and cook over medium-low heat until tender, about 20 minutes. Then add the second bowl of vegetables, including cabbage, and continue cooking until the green beans are tender, an additional 7 to 10 minutes.
