Grandpa's Tomato Gravy

Delicious Southern tomato gravy, perfect over rice, pasta, biscuits, or grits.
Ingredients:
  • 8 slices bacon, cut into 1/2 inch pieces
  • 1 large onion, chopped
  • 2 (28 ounce) cans diced tomatoes
  • 1 (14 ounce) can tomato sauce
  • 1 teaspoon white sugar, or more to taste
  • 0.5 teaspoon ground black pepper, or to taste
  • 1 tablespoon butter
Instructions:
  • Start by crisping up the bacon in a Dutch oven over medium heat until the fat starts to render, for about 2 minutes. Then, add the onion and sauté until soft and translucent, approximately 5 minutes. Mix in the diced tomatoes and tomato sauce, then season with sugar and black pepper. Let it simmer until the sauce thickens by 1/4 to 1/3, which should take around 30-45 minutes. Finally, stir in the butter right before serving.
