Succulent marinated lamb skewers, inspired by Georgian-Russian shashlik, grilled to perfection.
Ingredients:
  • 1 medium lemon
  • 2 cups red wine
  • 0.5 large red onion, cut into chunks
  • 6 cloves garlic, chopped, or more to taste
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2.5 pounds lamb, cut into 1-inch pieces
  • skewers, as needed
Instructions:
  • Halve the lemon and squeeze out the juice. Cut 2 lemon rinds into chunks.
  • Combine the lemon juice, rinds, red wine, onion, garlic, salt, and pepper in a spacious glass or ceramic bowl. Mix thoroughly before adding the lamb, ensuring it is evenly coated. Cover the bowl with plastic wrap and allow the lamb to marinate in the refrigerator for a minimum of 8 hours, or ideally up to 18 hours.
  • Take the lamb out of the marinade, letting any extra drip off, then discard the remaining marinade and thread the lamb onto skewers.
  • Prepare your outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Grill skewers, rotating occasionally, until the meat's center reaches at least 130 degrees F (60 degrees C) for medium doneness, approximately 15 minutes.
