Family recipe from Nova Scotia bakery owner. Perfect for special occasions. Enjoy with warm rolls or biscuits.
Ingredients:
  • 4 potatoes, cut into 1/2-inch cubes
  • 1 onion, cut into 1/2-inch pieces
  • 0.25 cup butter, divided
  • 6 cups cooked lobster meat, cut into bite-sized pieces
  • 1 cup heavy cream
  • 6 cups milk
  • 1 teaspoon white sugar
Instructions:
  • In a large saucepan, combine potatoes and onions, then cover them with salted water. Once it boils, lower the heat to simmer until the potatoes are tender, approximately 10 minutes. Drain and return to the saucepan.
  • As the potatoes simmer, melt half of the butter in a large skillet over medium-high heat. Add cubed lobster and cook until golden around the edges, about 5 minutes. After draining the potatoes, return them to the pan and mix in the remaining butter, lobster, cream, milk, and sugar. Heat everything well, stirring occasionally. Season with salt and pepper to taste, and serve.
