Elevate breakfast with homemade marmalade on toast.
Ingredients:
  • 3 (about 1 kg) grapefruits, rinsed
  • 280g lemon
  • 1500.00 gm (1.5 litres) water
  • 1kg caster sugar
  • 100g ginger
Instructions:
  • Cut grapefruits and lemons into quarters, then thinly slice them. Combine the fruit with water in a large, heavy-bottomed pan. Bring to a gentle boil and simmer for about 15 minutes, or until the rinds are tender.
  • Lower the heat and incorporate the sugar while stirring continuously until it dissolves. Introduce the ginger and raise the heat to bring the mixture to a boil, letting it cook for approximately 50 minutes or until the jam sets. Test the consistency by placing a spoonful of the mixture on a chilled saucer and freezing it for 2 minutes. If it solidifies, the jam is done.
  • Pour the jam into sterilized jars or keep it in an airtight container in the fridge for 3 weeks. Enjoy with scones, hot buttered toast, or as a sponge cake filling.
