Delicate melt-in-your-mouth cookies made with confectioners' sugar and cake flour. Use a large mixer for doubling the recipe.
Ingredients:
  • 1 cup butter, softened
  • 1 cup confectioners' sugar
  • 2 cups cake flour
  • 0.5 cup confectioners' sugar for rolling
Instructions:
  • Heat your oven to 325 degrees F (165 degrees C).
  • Combine butter, 1 cup confectioners' sugar, and vanilla in a large bowl and mix until smooth. Add cake flour, then gently fold in pecans. Shape dough into 1-inch balls and arrange 1 inch apart on ungreased cookie sheets.
  • Bake in the preheated oven for 15 to 19 minutes until lightly browned. Allow cookies to cool completely before rolling in extra confectioners' sugar. For storing in a tin, sprinkle the remaining sugar in the tin.
