Tender yams baked in a sweet orange glaze, a beloved Thanksgiving tradition.
Ingredients:
  • 8 medium yams, peeled and cubed
  • 0.5 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 6 tablespoons unsalted butter, cut into small chunks
  • 1 cup orange juice, or as needed
  • 1 cup miniature marshmallows, or to taste
Instructions:
  • Bring a large pot of water to a boil. Add yams and boil for 10 minutes. Drain, rinse twice with cold water, and soak for 15 minutes in cold water.
  • Preheat the oven to 275 degrees F (135 degrees C) while yams are soaking.
  • Combine white sugar, brown sugar, cinnamon, and nutmeg in a small bowl.
  • Peel and dice yams, then spread them in a large baking dish. Add butter and coat yams with sugar mixture. Pour orange juice into the dish until it reaches a depth of 1/2 inch.
  • - Place in the preheated oven, basting regularly, until yams are tender and the sauce is thick and sticky, for about 3 to 3 1/2 hours. - Sprinkle with mini marshmallows and switch on the broiler. - Broil until marshmallows are golden and melted, around 5 minutes.
