Nutty raisin quick bread with bran cereal and whole wheat flour.
Ingredients:
  • 1 cup raisins
  • 1 cup water
  • 2 cups rolled oats
  • 1 cup bran cereal (such as Kellogg's® All-Bran®)
  • 1 cup whole wheat flour
  • 1 cup milk
  • 1.5 teaspoons lemon juice
  • 1 egg
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and flour a 9x13-inch loaf pan.
  • In a small saucepan, bring raisins and water to a gentle boil. Simmer over medium heat for 5 minutes, then let it cool down.
  • Combine rolled oats, bran cereal, whole wheat flour, sugar, and salt in a bowl. In a separate small bowl, mix milk with lemon juice and let stand for 1-2 minutes to sour. Stir baking soda into the soured milk until dissolved. Pour the milk mixture into the dry ingredients and mix in the beaten egg. Fold in the raisins and their liquid, then transfer the batter into the prepared pan.
  • Bake in the preheated oven for about 1 hour until a toothpick inserted in the middle comes out clean. Allow to cool in the pan for 15 minutes, then transfer to a wire rack to finish cooling.
