Kid-friendly cakes that are fun to make and even more fun to eat!
Ingredients:
  • 180g butter, chopped, softened
  • 141.90 gm caster sugar
  • 1 egg, at room temperature
  • 500.00 ml plain flour, sifted
  • 4.00 gm baking powder
  • 250.00 ml chopped dates or mixed dried fruit
  • 250.00 ml cornflakes, crushed
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with parchment paper.
  • Cream the butter and sugar with an electric mixer until pale. Incorporate the egg thoroughly. Fold in the flour, baking powder, and a pinch of salt. Gently mix in the dates. Shape teaspoonfuls of the mixture into balls, then coat them with cornflakes.
  • Place the pearl cakes on trays, giving them space to spread. Bake for 20 minutes, switching the trays at the 15-minute mark, until they turn golden. Allow to cool on wire racks, then serve.
