Festive almond Christmas cookies, made with a cookie press.
Ingredients:
  • 2 cups butter
  • 1 cup white sugar
  • 2 egg yolks
  • 1 egg white
  • 2 tablespoons almond extract
  • 4.5 cups all-purpose flour
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and give the baking sheet a gentle grease.
  • In a large bowl, use an electric mixer to beat butter until light and fluffy. Gradually add sugar, beating until mixture is lighter in color. Add egg yolks one at a time, allowing each to blend in before adding the next. Beat in egg white and almond extract. Slowly add flour while beating until fully incorporated.
  • Dispense dough from the cookie press onto the baking sheet.
  • Bake in the preheated oven for 8-10 minutes until the edges turn golden. Let the cookies cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.
