Elevate Easter with flavorful slow-roasted lamb paired with savory orzo and tangy feta.
Ingredients:
  • 1 (6 pound) bone-in leg of lamb
  • 3 cups mashed tomatoes
  • 1 medium onion, finely chopped
  • 3 teaspoons dried oregano
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 6 cups water
  • 1 pound uncooked orzo pasta
  • 0.5 pound feta cheese
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Coat the lamb in a mixture of mashed tomatoes, onion, olive oil, oregano, salt, pepper, and lemon juice in a roasting pan until well covered. Cover the pan with a lid or aluminum foil.
  • After baking in the preheated oven for approximately 3 hours, carefully take out the dish, unwrap it by removing the aluminum foil, and keep the oven turned on.
  • Pour water and orzo into the roasting pan. Place it back in the oven and bake until the pasta is cooked and most of the liquid is absorbed, taking 30 minutes to 1 hour. Stir in feta cheese until melted and well combined.
