Try this mouthwatering gluten-free Greek lamb pizza for a crowd-pleasing weeknight dinner.
Ingredients:
  • Basil leaves, to garnish
  • 2 Simply gluten-free pizza bases, thawed
  • 500g Grill lamb souvlaki strips
  • 200g gluten-free pizza sauce
  • 375.00 ml shredded mozzarella cheese
  • 125g cherry tomatoes, halved
  • 200g Brand mixed chargrilled peppers, drained, cut into strips
  • 80g gluten-free basil pesto
  • Baby rocket leaves, to serve
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line 2 baking trays with baking paper. Place the pizza bases on the trays. Heat a lightly oiled barbecue grill or chargrill over medium-high heat. Cook the lamb for 3-4 minutes until browned, then transfer to a plate.
  • Cover pizza bases in a generous layer of pizza sauce followed by a scattering of half the mozzarella cheese. Layer on the tomatoes, peppers, and lamb, then finish with another layer of mozzarella cheese on top.
  • Bake for 15-20 minutes until the mozzarella is bubbling and lightly browned. Drizzle with pesto, sprinkle with fresh basil, and serve alongside arugula.
