Greek lamb salad

Elevate traditional Greek salad with savory lamb sausages and crisp roasted chickpeas.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 500g lamb sausage
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced
  • 300g mixed baby tomatoes, halved
  • 125.00 ml drained roasted capsicum strips
  • 165.00 ml kalamata olives
  • 125.00 ml fresh mint leaves, torn
  • 42.00 gm lemon juice
  • 1 baby cos lettuce, leaves separated
  • 100g fetta, crumbled
  • 2 x 25g packets crunchy roasted lightly salted chickpeas
  • 40.00 ml fresh oregano leaves
  • 4 slices white crusty bread, to serve
Instructions:
  • Heat half of the oil in a medium frying pan over medium-high heat until sizzling. Sear sausages for 7 to 8 minutes until beautifully browned and fully cooked. Transfer to a cutting board and slice into thick pieces.
  • In a bowl, mix together cucumber, tomato, capsicum, olives, mint, juice, and the rest of the oil. Add sausages and toss lightly to blend.
  • Distribute lettuce into bowls or airtight containers. Layer with sausage mixture, feta, chickpeas, and oregano. Enjoy with bread on the side.
