Freeze Greek turkey meatballs for quick, effortless weeknight dinners that can be prepared in advance and stored for a month.
Ingredients:
  • 4 (6 inch) pita bread rounds
  • 0.5 cup finely chopped onion
  • 0.5 cup crumbled feta cheese
  • 0.5 cup seasoned bread crumbs
  • 2 large eggs
  • 3 tablespoons minced fresh parsley
  • 2 teaspoons minced garlic
  • 0.5 teaspoon dried oregano
  • 1 teaspoon lemon zest
  • 2 pounds ground turkey
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1.25 pounds fresh green beans, trimmed
  • 1 pint cherry tomatoes
  • 0.5 teaspoon kosher salt
  • 1 (6 ounce) container plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • 0.25 teaspoon kosher salt
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) and prepare a rimmed baking sheet by lining it with parchment paper.
  • Combine diced onion, crumbled feta cheese, bread crumbs, eggs, chopped parsley, minced garlic, oregano, and lemon zest in a spacious bowl. Mix in ground turkey, salt, and pepper until evenly blended.
  • Shape the mixture into twenty 1 ½- to 2-inch meatballs using damp hands, then place them on the baking sheet lined with parchment paper.
  • Bake in the preheated oven for 10 to 12 minutes until golden brown and slightly firm; meatballs will be partially cooked. Allow meatballs to cool completely for about 20 minutes.
  • Toss together the cooled meatballs and green beans in a spacious resealable freezer bag. Seal the bag tightly, removing as much air as you can. Freeze for up to one month.
  • Preheat your oven to a toasty 425 degrees F (220 degrees C, in case you were wondering). Line a rimmed baking sheet with parchment paper.
  • Spread out the frozen meatballs and beans on a large baking sheet with edges. Mix in cherry tomatoes and coat everything in olive oil, salt, and pepper.
  • Roast in the oven at 425 degrees F (220 degrees C) until the vegetables are tender and the meatballs are cooked through, approximately 20 minutes.
  • Combine creamy Greek yogurt with fresh lemon juice, zesty lemon zest, aromatic dill, and a pinch of salt to create a flavorful tzatziki sauce.
