Cheesy mashed potato pot pies - a cozy twist on a classic favorite!
Ingredients:
  • 2 x 475g ctns Potato Mash
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, coarsely grated
  • 2 garlic cloves, crushed
  • 15.00 gm Greek Seasoning
  • 400g can diced tomatoes
  • 280g jar Chargrilled Eggplant, drained, coarsely chopped
  • 44.40 gm no-added-salt tomato paste
  • 100g feta, crumbled
  • 80g (1 cup) coarsely grated cheddar
Instructions:
  • Preheat oven to 220°C while heating oil in a large, deep frying pan over medium-high heat. Sauté onion and carrot until soft, about 3 minutes. Increase heat to high and add mince, garlic, and Greek seasoning, cooking for 5 minutes until browned.
  • Combine the tomato, eggplant, and tomato paste together for 2 minutes. Pour the mixture evenly into six 375ml (1 1/2-cup) ovenproof dishes. Layer with mashed potatoes, feta cheese, and cheddar. Bake for 25-30 minutes, or until the cheddar is melted.
