One-pan zucchini casserole that's irresistibly delicious and eliminates the need for extra baking dishes.
Ingredients:
  • 1 medium zucchini, halved and sliced
  • 0.25 cup diced red onion
  • 0.25 cup diced green bell pepper
  • 2 (4 ounce) cans sliced black olives, drained
  • 0.25 cup crumbled feta cheese
  • 2 tablespoons Greek vinaigrette salad dressing
  • 0.25 cup grape or cherry tomatoes, halved
Instructions:
  • Preheat your oven to 350°F (175°C) to start creating the perfect dish.
  • Prepare a sheet of aluminum foil by applying a layer of nonstick cooking spray. Arrange zucchini, onion, pepper, and olives in the center. Top with feta cheese and a drizzle of vinaigrette. Fold and seal the edges to create a packet.
  • Bake the vegetables in a preheated oven for 30 minutes until tender. Then, open the foil packet, switch the oven to Broil, and broil until the feta lightly browns. Finally, add the grape tomatoes and serve.
