Green and gold ice-blocks

Aussie-themed ice-blocks perfect for any celebration, with green and gold colors reminiscent of Australia Day and Sydney to Hobart race.
Ingredients:
  • 240g kiwifruit
  • 30.00 gm caster sugar
  • 1/2 x 170g can passionfruit pulp in syrup
  • 425g can mango slices in syrup, drained
Instructions:
  • Combine fresh kiwifruit and sugar in a food processor or blender. Blend until smooth, ensuring the sugar is completely dissolved. Transfer the mixture into an ice-block mould with 6 holes, each holding 80ml. Freeze for 4 hours or until solid.
  • After straining the passionfruit pulp and setting aside the seeds, combine the pulp and mango in a food processor or blender until smooth. Gently mix in the reserved passionfruit seeds. Pour this mixture over the kiwifruit layer, leaving space for expansion while freezing. Cover the molds and freeze until solid, preferably overnight.
  • Unmould the ice blocks and serve.
