Green bean and cherry tomato salad

Crunchy sunflower and sesame seed green bean salad adds amazing texture and taste.
Ingredients:
  • 800g green beans
  • 250g (1 punnet) cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 40g (1/4 cup) sunflower seed kernels
  • 12.00 gm sesame seeds
  • 40.00 ml chopped fresh continental parsley leaves
  • 80mls (1/3 cup) olive oil
  • 40.00 ml balsamic vinegar
  • 11.80 gm wholegrain mustard
  • 1 garlic clove, crushed
  • Salt & ground black pepper, to taste
Instructions:
  • 1. Boil a large saucepan of salted water. Add beans and cook for 2 minutes until bright green and tender crisp. Drain and cool in iced water. Transfer to a bowl and mix in tomatoes, onion, sunflower kernels, sesame seeds, and parsley. Toss to combine.
  • Combine oil, vinegar, mustard, garlic, salt, and pepper in a small screw-top jar. Shake well to make the dressing.
  • Drizzle the dressing over the salad and mix well to coat before serving.
