Cheesy breakfast puff with a kick of green onions and chilies.
Ingredients:
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons garlic powder
  • 8 eggs
  • 2 cups small curd cottage cheese
  • 0.25 cup shredded Monterey Jack cheese
  • 0.25 cup shredded Cheddar cheese
  • 2 green onions, chopped
  • 1 (7 ounce) can diced green chilies, drained
  • 0.25 cup butter
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give a gentle grease to a 7x11 inch casserole dish.
  • Combine flour, baking powder, and garlic powder by sifting. Beat eggs in a separate bowl until smooth. Slowly mix in the flour mixture. Add cheeses, green onions, chilies, and butter. Transfer the batter to a greased casserole dish.
  • Bake in a preheated oven for 35 to 45 minutes, or until the loaf is firm and a toothpick inserted into the center comes out clean.
