Whip up a refreshing green smoothie with kale, lime, cucumber, and mint for a nutritious boost!
Ingredients:
  • 3 kale leaves, centre stem removed
  • 1 Lebanese cucumber, coarsely chopped
  • 1 lime, peeled, coarsely chopped
  • 1 green apple, cored, coarsely chopped
  • 2cm-piece fresh ginger, peeled, chopped
  • 1 mint sprig
  • 375ml coconut water
  • Mint sprigs, extra, to serve
  • Lime wedges, to serve
Instructions:
  • Combine fresh kale, crisp cucumber, zesty lime, juicy apple, spicy ginger, fragrant mint, and hydrating coconut water in a blender. Blend until luxuriously smooth.
  • Portion the mixture into individual serving glasses. Garnish with additional mint and lime, and serve promptly.
