"Baked green tomatoes in savory soy dressing - a healthier twist on a classic Southern dish."
Ingredients:
  • 6 green tomatoes, cut into 1-inch cubes
  • 3 stalks celery, cut into 1/2-inch pieces
  • 16 green onions (white and pale green parts only), chopped
  • 1 bunch cilantro, chopped
  • 5 tablespoons soy sauce
  • 0.25 cup olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon red pepper flakes
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Combine green tomatoes, celery, green onions, and cilantro in a 2-quart casserole dish. In a separate bowl, whisk together soy sauce, olive oil, brown sugar, vinegar, black pepper, salt, and red pepper flakes. Pour over the vegetables and toss to coat.
  • Roast in the oven until vegetables are tender, stirring halfway through to redistribute the sauce, for about 45 minutes.
