Spicy-sweet peach pie with homemade crust and fiery habanero peppers for a flavor explosion.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 9 tablespoons cold unsalted butter, cut into 1/4-inch cubes
  • 3 tablespoons ice-cold peach nectar, or as needed
  • 4 large fresh peaches - peeled, pitted and chopped
  • 6 large fresh peaches - peeled, pitted, and sliced
  • 3 habanero peppers, seeded and minced (wear gloves), or to taste
  • 0.33333334326744 cup all-purpose flour
  • 1 cup white sugar
  • 0.25 cup unsalted butter, softened
Instructions:
  • Combine 1 1/2 cups of flour and salt in a food processor, pulse briefly to mix. Add 9 tablespoons of chilled unsalted butter, pulse 4-5 times until mixture resembles coarse crumbs. While the machine is running, slowly add peach nectar 1 tablespoon at a time until dough forms. Transfer dough to a bowl, shape into a ball, wrap in plastic, and refrigerate for 30 minutes to hydrate.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a food processor, combine 4 chopped peaches and pulse for about 1 minute until pureed. Gradually add minced habanero peppers, blending until smooth. In a separate bowl, gently toss the remaining 6 sliced peaches with the habanero puree.
  • Combine 1/3 cup of flour, white sugar, and 1/4 cup of softened unsalted butter in a bowl until it forms a crumbly streusel mixture; set aside.
  • Divide the dough in half and shape each into a 10-inch circle. Line a 9-inch pie dish with one circle. Fill the bottom crust with the peach-habanero mix and top with the crumbly sugar streusel. Cover with the second crust, seal the edges by crimping with a fork, and make slits for steam to escape.
  • Bake until the crust turns a beautiful golden brown and the filling bubbles and thickens, approximately 50 minutes in the preheated oven.
