Make classic, light and fluffy biscuits using this timeless family recipe emphasizing gentle dough handling techniques passed down through generations.
Ingredients:
  • 0.5 teaspoon lard
  • 2 cups all-purpose flour
  • 0.75 teaspoon salt
  • 0.25 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 tablespoons butter, frozen
  • 2 tablespoons lard, frozen
  • 1 teaspoon bacon drippings
  • 1 cup buttermilk
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and give your baking sheet a loving touch of 1/2 teaspoon of lard.
  • Combine flour, salt, baking soda, and baking powder in a bowl. Grate frozen butter and 2 tablespoons of frozen lard into the flour using a cheese grater. Gently stir a couple of times to mix. Create a well in the center and pour in bacon drippings and buttermilk. Lightly and quickly mix with just your fingertips until dough forms (it will be sticky).
  • On a floured surface, gently flatten the dough, fold it in half, pat down, and repeat folding 4-5 times. Roll out the dough to 1-inch thick square. Cut into rounds using a biscuit cutter and place on a baking sheet touching each other.
  • Bake in the oven until beautifully risen and lightly golden brown, for 15-20 minutes.
