Rotini pasta in Marsala wine and mushroom sauce topped with pecorino cheese for a simple yet sophisticated meal.
Ingredients:
  • 1 box Barilla® Pronto™ Rotini
  • 0.5 cup Marsala cooking wine
  • 0.5 cup Barilla® Mushroom Sauce
  • 0.75 cup baby bella (crimini) mushrooms, sliced
  • 0.5 cup grated pecorino cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste
Instructions:
  • Empty the entire box of pasta into a generously sized skillet, about 12 inches wide. Cover the pasta with 2 1/2 cups of cold water. Add mushrooms and wine to the skillet and turn the heat to high. Set a timer for 10 minutes. If desired, season with a pinch of salt.
  • Cook on high heat, stirring occasionally, until most of the liquid is gone.
  • Combine the sauce with the ingredients and warm gently, stirring occasionally until well mixed.
  • Take off the heat and gently mix in the cheese and parsley. Serve promptly.
