Pomegranate-infused sweet syrup adds vibrant flavor and color to beverages and sweets.
Ingredients:
  • 15 (about 2.8kg) pomegranates
  • 215g (1 cup) caster sugar
Instructions:
  • Roll a whole pomegranate in your hand to release the juice sacs. Using a sharp knife, make a small hole in the base to drain the juice into a jug. Repeat with the rest of the pomegranates.
  • In a medium saucepan, mix the pomegranate juice and sugar over low heat until the sugar dissolves. Raise the heat to medium-high and simmer gently without stirring for 15 minutes until slightly thickened.
  • After washing a 750ml glass bottle and lid with hot, soapy water, place them in a saucepan, cover with water, and bring to a boil. Let them boil for 10 minutes, then dry upside down on a wire rack.
  • Transfer the syrup into the sterilized bottle and seal it right away. Remember to label, date, and store it in a cool, dark place, away from direct sunlight.
