Grilled asparagus wrapped in foil with crunchy cashews for a simple yet creative side dish.
Ingredients:
  • 1 lb fresh asparagus spears
  • 2 tablespoons butter or margarine
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped cashews
Instructions:
  • Preheat the gas or charcoal grill. Lay out an 18x18-inch piece of heavy-duty foil. Snap off the tough ends of the asparagus. Arrange the asparagus in the center of the foil and drizzle with butter, salt, and pepper.
  • Wrap the asparagus tightly in foil by bringing up two sides and sealing them with a 1/2-inch fold, then fold again to allow room for heat circulation. Finally, seal the other sides by folding them.
  • Grill the packet over low heat with the grill covered for 10 to 15 minutes, rotating it 1/2 turn after 4 minutes, until the asparagus is tender.
  • Before serving, make a big X cut on the packet's top, gently peel back the foil to release steam, and then garnish with cashews.
