Grilled Chicken and Vegetable Salad

Quick and delicious grilled chicken salad with balsamic vinaigrette.
Ingredients:
  • 1 lb uncooked chicken breast tenders (not breaded)
  • 7 tablespoons light balsamic vinaigrette dressing
  • 1 medium zucchini (8 oz), cut in half lengthwise
  • 1 medium red onion, cut into 1/4-inch-thick slices
  • 4 plum (Roma) tomatoes, cut in half
  • 6 cups baby arugula
  • 1/4 cup crumbled feta cheese (1 oz)
Instructions:
  • Preheat the grill over medium-high heat. Brush the chicken with 1 tablespoon of dressing and lightly oil the grill rack. Grill the chicken, zucchini, and onion for 6 to 8 minutes, turning once, until chicken is cooked through and vegetables are tender. Add tomato halves to the grill for the final 4 minutes of cooking.
  • Take the chicken and vegetables off the grill. Slice the chicken thinly and roughly chop the vegetables.
  • Combine chicken, vegetables, and remaining 6 tablespoons of dressing in a large bowl. Gently mix in arugula and cheese.
