Grilled Chimichurri Chicken

Spice up grilled chicken with zesty homemade chimichurri sauce featuring fresh herbs and bold flavors.
Ingredients:
  • 1 cup chopped fresh parsley
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons chopped fresh cilantro
  • 4 cloves garlic, finely chopped
  • 2 teaspoons dried oregano leaves
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 4 boneless skinless chicken breasts
  • 1 cup pear tomatoes
  • 1 poblano chile
  • 1 red bell pepper
  • 1 orange bell pepper
Instructions:
  • Combine the sauce ingredients in a food processor or blender. Blend until smooth.
  • Place chicken breasts in a resealable bag and add half of the sauce. Refrigerate the remaining sauce for later use. Seal the bag and let the chicken marinate in the refrigerator for at least 2 hours, but no more than 8 hours.
  • Remove the marinated chicken from the sauce and discard the marinade.
  • Brush the grill rack with oil. Heat up your gas or charcoal grill. Grill the chicken over medium-high heat until it reaches an internal temperature of at least 165°F. Cut your vegetables and grill them on a grill pan until cooked to your liking. Serve everything with the remaining sauce.
