Grilled eggplant with tomato dressing

Chargrilled perfection - adding a touch of char for extra flavor!
Ingredients:
  • 1 large eggplant, cut into 1cm-thick rounds (see tip)
  • 36.40 gm olive oil
  • 1 large tomato, finely chopped
  • 20.00 ml white wine vinegar
  • 40.00 ml chopped fresh oregano leaves
  • 1 garlic clove, crushed
Instructions:
  • Heat up a chargrill over medium-high heat. Lay the eggplant on a plate, drizzle with half of the oil, making sure to coat it all around. Grill for 2 to 4 minutes on each side until it's charred and tender.
  • In a bowl, combine tomatoes, vinegar, oregano, garlic, and remaining oil. Season with salt and pepper, then toss together.
  • Place the eggplant slices neatly on a plate, then generously spoon the flavorful tomato mixture over them. Serve and enjoy the delicious combination of flavors!
