Delicious grilled fish tacos with zesty lime marinade and creamy chipotle-lime sauce.
Ingredients:
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons fresh lime juice
  • 2 teaspoons lime zest
  • 1.5 teaspoons honey
  • 1 teaspoon seafood seasoning, such as Old Bay™
  • 1 teaspoon hot pepper sauce, or to taste
  • 0.5 teaspoon cumin
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon ground black pepper
  • 1 pound tilapia fillets, cut into chunks
  • 1 (8 ounce) container light sour cream
  • 0.5 cup adobo sauce from chipotle peppers
  • 0.5 teaspoon seafood seasoning, such as Old Bay™
  • 0.25 teaspoon cumin
  • 0.25 teaspoon chili powder
  • 1 (10 ounce) package tortillas
  • 3 ripe tomatoes, seeded and diced
  • 1 small head cabbage, cored and shredded
  • 1 bunch cilantro, chopped
  • 2 limes, cut in wedges
Instructions:
  • Create a flavorful marinade by mixing olive oil, vinegar, lime juice, lime zest, garlic, honey, seafood seasoning, hot pepper sauce, cumin, chili powder, and black pepper in a bowl. Pour the marinade over the tilapia in a dish, cover it with plastic wrap, and refrigerate for 6 to 8 hours.
  • Prepare the dressing by mixing sour cream and adobo sauce in a bowl. Stir in lime juice, lime zest, seafood seasoning, cumin, and chili powder. Season with salt and pepper to your liking. Chill in the fridge until ready to use.
  • Preheat the outdoor grill until it's sizzling hot and grease the grate lightly. Position the grate 4 inches away from the heat source.
  • After marinating, pat fish dry and discard marinade. Grill fish until fork-tender, turning once, for about 9 minutes.
  • For tasty tacos, arrange fish on tortillas. Top with tomatoes, cabbage, and cilantro to your liking, then generously drizzle with dressing.
  • Roll the tortillas around the fillings and sprinkle with lime wedges for a perfectly presented dish.
