Elevate your BBQ game with a hearty beef salad - a visually stunning and delicious meal option.
Ingredients:
  • 1/3 cup olive or vegetable oil
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons red wine vinegar
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon crushed red pepper flakes
  • 1-pound beef boneless sirloin steak, 1 to 1 1/2 inches thick
  • 1 large red or yellow bell pepper, cut into strips
  • 1 cup sliced mushrooms (3 ounces)
  • 1/8 teaspoon pepper
  • 6 cups bite-size pieces salad greens
Instructions:
  • Prepare the grill for direct heat. In a tightly covered container, shake all dressing ingredients together, setting aside 1/4 cup for later use.
  • Grill beef to your liking for 15-20 minutes, flipping once. Toss bell pepper and mushrooms with 2 tablespoons of dressing in a bowl. Grill vegetables in a basket for 5 minutes until bell pepper is crisp-tender, shaking the basket occasionally. Enjoy!
  • Season beef with a touch of salt and pepper, then slice into 1/4-inch pieces. Combine beef with the 1/4 cup of dressing. In a large bowl, mix salad greens, vegetables, beef, and the rest of the dressing. Toss everything together until well combined.
