Delicious grilled portobello sandwich with basil mayo on a kaiser roll – a perfect summer lunch.
Ingredients:
  • 0.33333334326744 cup balsamic vinegar
  • 0.25 cup olive oil
  • 1 tablespoon minced garlic
  • 6 portobello mushroom caps
  • 0.5 cup mayonnaise
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 6 kaiser rolls, split, toasted
  • 1 tablespoon butter, softened, or as needed
  • 6 leaves lettuce
  • 6 tomato slices
Instructions:
  • Heat up your outdoor grill to medium heat and lightly oil the grate.
  • Combine vinegar, oil, and garlic in a small bowl and whisk until well blended.
  • Lay mushrooms on a baking sheet, gills facing up. Brush with most of the marinade and marinate for 3 to 5 minutes.
  • Place the mushrooms on the preheated grill with the gills facing down. Grill while basting with the remaining marinade until tender, about 4 minutes per side.
  • As the mushrooms cook, combine mayonnaise, basil, Dijon, and lemon juice in a small bowl. Butter and toast the rolls, then spread with the mayonnaise mixture.
  • Transfer the grilled mushrooms onto the bottom buns, then layer with lettuce, tomatoes, and the top buns.
