Grilled beef bites with a mix of veggies for a quick and delicious appetizer in just 30 minutes.
Ingredients:
  • 1 package (6 oz) small fresh portabella mushrooms
  • 1/2 lb boneless beef sirloin steak (about 3/4 inch thick), trimmed of fat and cut in 3/4-inch cubes
  • 1 cup frozen small whole onions (from 1-lb bag), thawed
  • 1/2 cup plus 2 tablespoons balsamic vinaigrette
  • 1/2 cup halved grape or cherry tomatoes
Instructions:
  • Preheat gas or charcoal grill. Combine mushrooms, beef, onions, and 1/2 cup of vinaigrette in a large bowl, tossing to coat. Allow the mixture to marinate for 10 minutes, then drain excess liquid. Transfer the mixture to a grill basket or wok.
  • Preheat grill, place the basket on, cover, and cook over medium-high heat for 7 to 9 minutes. Shake the basket or stir the beef mixture occasionally until vegetables are tender and beef reaches your desired doneness. Finally, stir in the tomatoes.
  • Transfer the beef mixture into a serving dish, add the remaining 2 tablespoons of vinaigrette, and serve with toothpicks.
