Grilled guacamole with avocado, onions, veggies, and Cotija cheese for a delicious twist on a summertime classic.
Ingredients:
  • 1 medium sweet onion, thinly sliced, cut in half
  • 2 jalapeño chiles (3 inch), cut lengthwise in half, seeded
  • 4 ripe large avocados (about 2 lb) cut in half, pitted and peeled
  • 3 plum (Roma) tomatoes, cut lengthwise in half, seeded
  • 1/4 cup chopped fresh cilantro
  • 1 clove garlic, finely chopped
  • 1 teaspoon coarse (kosher or sea) salt
  • 1/2 teaspoon ground cumin
  • 1/4 cup Queso Cotijo cheese, crumbled
Instructions:
  • Preheat your gas or charcoal grill. Generously coat an 18x14-inch piece of heavy-duty foil or a grill pan with cooking spray. Arrange onion and chiles on the foil or pan, then transfer to the preheated grill over medium heat.
  • Grill with the lid on for 5 to 8 minutes until the onions and chiles are crisp-tender and slightly browned. Then, add the avocados and tomatoes to the mix. Grill covered for about 5 more minutes until the avocados and tomatoes are heated through, flipping them once halfway through grilling.
  • After grilling, transfer the vegetables to a cutting board. Finely chop the chiles and coarsely chop the remaining vegetables. In a medium bowl, combine the vegetables, cilantro, lime juice, garlic salt, and cumin. Gently mix everything together, then fold in the cheese. Serve the dish warm and optionally with tortilla chips on the side for dipping.
