Elegant avocado soup with tangy pickled onions, perfect for a chic dinner party appetizer.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 long green chilli, seeded, chopped
  • 1.25L (5 cups) chicken style liquid stock
  • 2 large ripe avocados
  • 82.50 ml coriander leaves
  • Sour cream, to serve
  • 1 small red onion, halved, thinly sliced
  • 60ml white wine vinegar
  • 10.00 gm caster sugar
Instructions:
  • Combine the ingredients for the pickled onion in a small bowl along with 1 teaspoon of salt. Allow the mixture to marinate for at least 1 hour, then proceed by draining.
  • Warm the oil in a skillet over medium heat.
  • Sauté the onion for 1-2 minutes, then add the garlic and chilli, cooking for 1 minute. Pour in the stock and bring to a boil. Reduce heat and simmer for 5 minutes. Let it cool slightly, then blend in a blender with avocado and coriander until smooth. Return to a clean pan, season, and warm over low heat. Serve the soup with a swirl of sour cream, pickled onion, and freshly ground black pepper on top.
