Delicious island dessert made with sticky sweet rice flour, perfect for family gatherings in Guam and Hawaii.
Ingredients:
  • 2 cups sweet rice flour (mochiko)
  • 1.75 cups white sugar
  • 1 tablespoon baking soda
  • 2 eggs
  • 1 (12 fluid ounce) can evaporated milk
  • 1 (13.5 ounce) can coconut milk
  • 1 teaspoon vanilla extract
  • 0.25 cup butter, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch glass baking dish with cooking spray.
  • Combine the rice flour, sugar, and baking soda by sifting them together, then set aside. Mix eggs with evaporated milk, coconut milk, and vanilla extract. Incorporate flour and butter into the mixture, beating until well combined.
  • Transfer the mixture into the pan you've already prepared and bake in the oven that's been preheated for 30 minutes. Let it cool entirely before slicing into small (1 1/2 inch) squares.
