Experience the rich history and bold flavors of Gullah red rice, a beloved dish from Charleston with roots in African culinary traditions.
Ingredients:
  • 4 slices bacon, chopped
  • 1 green bell pepper, chopped
  • 1 small onion, chopped
  • 2 smoked sausage links, sliced
  • 1 (8 ounce) can tomato sauce (such as Hunt's®)
  • 1 (8 ounce) can tomato paste (such as Hunt's®)
  • 1 cup water
  • 2 cups uncooked parboiled (converted) rice
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
Instructions:
  • Cook bacon in a pot over medium-high heat until crispy, about 7 to 10 minutes. Saute bell pepper and onion in the bacon grease until soft, around 5 minutes. Add sausage and cook until browned, stirring occasionally, for 8 to 10 minutes. Transfer the mixture to a bowl.
  • Combine the tomato sauce, tomato paste, and 1 cup of water in a pot. Bring to a boil and stir in the rice, sugar, salt, pepper, onion powder, and garlic powder. Once boiling, reduce the heat and simmer over medium-low heat for 10 minutes.
  • Preheat the oven to 350°F (175°C) in the meantime.
  • Spread the rice mixture evenly in a 9x13-inch baking pan and cover it with foil.
  • Cook in the oven until the liquid is absorbed and the rice is tender, around 25 minutes.
