Gullah Red Rice

Experience the rich history and bold flavors of Gullah red rice, a beloved dish from Charleston with roots in African culinary traditions.
Ingredients:
4slicesbacon, chopped
1green bell pepper, chopped
1 small onion, chopped
2smoked sausage links, sliced
1 (8 ounce) cantomato sauce (such as Hunt's®)
1 (8 ounce) cantomato paste (such as Hunt's®)
1cupwater
2cups uncooked parboiled (converted) rice
1teaspoonsalt, or to taste
1teaspoongroundblack pepper
1teaspoongarlic powder
Instructions:
Cook bacon in a pot over medium-high heat until crispy, about 7 to 10 minutes. Saute bell pepper and onion in the bacon grease until soft, around 5 minutes. Add sausage and cook until browned, stirring occasionally, for 8 to 10 minutes. Transfer the mixture to a bowl.
Combine the tomato sauce, tomato paste, and 1 cup of water in a pot. Bring to a boil and stir in the rice, sugar, salt, pepper, onion powder, and garlic powder. Once boiling, reduce the heat and simmer over medium-low heat for 10 minutes.
Preheat the oven to 350°F (175°C) in the meantime.
Spread the rice mixture evenly in a 9x13-inch baking pan and cover it with foil.
Cook in the oven until the liquid is absorbed and the rice is tender, around 25 minutes.
