Microwave gyeran jjim: Quick and easy Korean steamed eggs with 5 ingredients, perfect for any meal!
Ingredients:
  • 6 large eggs
  • 1 1/8 teaspoons kosher salt
  • 3/4 teaspoon instant dashi powder like Ajinomoto Hondashi
  • 3 imitation crab sticks, cut crosswise into 1/2-inch pieces
  • 1 1/2 cups water
  • 1 scallion, root trimmed and diced
Instructions:
  • Prepare the egg mixture: Crack the eggs into a large microwave-safe bowl. Whisk vigorously with a fork until smooth. Add salt, dashi powder, and stir in the crab sticks.
  • Pour the freshly boiled water over the egg mixture and mix swiftly with a fork. Don't be alarmed if the eggs curdle slightly from the hot water, speed is key for perfect results.
  • Microwave the eggs: Set the bowl on a microwave-safe plate for ease and to avoid spills. Microwave the uncovered eggs on high for 2 minutes until the edges start to set. Take the bowl out and gently use a fork to blend cooked and uncooked eggs together.
  • Extend cooking time: Reheat the eggs in the microwave for an additional minute, then delicately loosen them by running a fork along the edges and base.
  • Sprinkle scallions on top and heat: Scatter the scallions over the eggs and microwave for 45 seconds to 1 minute until gently set. Ensure the eggs are soft when pierced with a fork. Adjust timing based on your microwave's power. The dish should resemble custardy scrambled eggs, irresistibly creamy. Some water on the surface is normal. If needed, continue microwaving in 15-second intervals until fully cooked. Let it cool briefly before serving. Refrigerate any leftovers tightly covered for up to 2 days.
