Korean seafood scallion pancakes with savory dipping sauce.
Ingredients:
3cups frozen seafood mix (such as shrimp, oysters, clams, squid)
2cups water
2cups all-purpose flour
1bunchscallions, cut into 2-inch pieces
1clovegarlic, minced
1tablespoonolive oil, or as needed
3tablespoons soy sauce
1scallion, thinly sliced
1.5 teaspoons rice vinegar
1teaspoonsesame oil
1teaspoonbrown sugar
0.5 teaspoongochugaru (Korean red pepper flakes)
0.5 teaspoonsesame seeds
Instructions:
In a bowl, mix seafood mix, water, flour, 1 bunch of chopped scallions, eggs, minced garlic, salt, and pepper until a thick batter forms.
In a nonstick skillet over medium-high heat, warm olive oil. Pour half of the batter into the skillet, spreading evenly. Cook until the bottom and edges turn golden brown, about 7 to 8 minutes. Flip and cook the other side until golden brown, about 7 to 8 more minutes. Transfer to a plate. Repeat the process with the rest of the batter.
In a bowl, mix soy sauce, 1 stalk of scallion, rice vinegar, sesame oil, brown sugar, gochugaru, and sesame seeds to create a flavorful dipping sauce for the pancakes. Enjoy the pancakes with the sauce on the side.
