Korean seafood scallion pancakes with savory dipping sauce.
Ingredients:
  • 3 cups frozen seafood mix (such as shrimp, oysters, clams, squid)
  • 2 cups water
  • 2 cups all-purpose flour
  • 1 bunch scallions, cut into 2-inch pieces
  • 1 clove garlic, minced
  • 1 tablespoon olive oil, or as needed
  • 3 tablespoons soy sauce
  • 1 scallion, thinly sliced
  • 1.5 teaspoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 0.5 teaspoon gochugaru (Korean red pepper flakes)
  • 0.5 teaspoon sesame seeds
Instructions:
  • In a bowl, mix seafood mix, water, flour, 1 bunch of chopped scallions, eggs, minced garlic, salt, and pepper until a thick batter forms.
  • In a nonstick skillet over medium-high heat, warm olive oil. Pour half of the batter into the skillet, spreading evenly. Cook until the bottom and edges turn golden brown, about 7 to 8 minutes. Flip and cook the other side until golden brown, about 7 to 8 more minutes. Transfer to a plate. Repeat the process with the rest of the batter.
  • In a bowl, mix soy sauce, 1 stalk of scallion, rice vinegar, sesame oil, brown sugar, gochugaru, and sesame seeds to create a flavorful dipping sauce for the pancakes. Enjoy the pancakes with the sauce on the side.
