Spooky Crispy Chicken Fingers for a fun kids' party!
Ingredients:
  • 62.50 ml plain flour
  • 20.60 gm milk
  • 37.50 gm polenta
  • 82.50 ml dried breadcrumbs
  • 12 chicken tenderloins, trimmed, halved lengthways
  • 24 flaked almonds
  • olive oil cooking spray
  • tomato sauce, to serve
Instructions:
  • Preheat your oven to 200°C and lightly grease 2 baking trays.
  • Spread flour onto a plate. Mix egg and milk in a bowl. Combine polenta and breadcrumbs in another bowl. Spread polenta mixture on a plate. Coat each piece of chicken in flour, then dip in egg mixture, and finally coat in polenta mixture before placing on trays.
  • Brush one end of each succulent chicken finger with the remaining flavorful egg mixture. Place one crunchy almond on each piece and press down gently but firmly to ensure it sticks. Spritz the fingers with a light coating of oil for a perfect golden finish.
  • Bake without a cover for 20 minutes until beautifully golden and fully cooked. Enjoy with tomato sauce.
