Mediterranean salad with pan-fried halloumi, tomatoes, mint, and chickpeas.
Ingredients:
  • 1 (14 ounce) can chickpeas, drained
  • 2 large tomatoes, chopped
  • 3 medium green onions, sliced
  • 12 leaves fresh mint, chopped
  • 1 medium lemon, juiced
  • 2 tablespoons extra-virgin olive oil
  • salt and freshly ground black pepper to taste
  • 7 ounces halloumi cheese, sliced
Instructions:
  • Combine chickpeas, juicy tomatoes, vibrant green onions, fresh mint, zesty lemon juice, and fragrant olive oil in a bowl. Season generously with salt and pepper, then let the flavors mingle while you prepare the rest of the dish.
  • In a hot nonstick skillet, brown the halloumi for 1 to 2 minutes on each side until deeply golden. Transfer to a cutting board and dice into 1/2-inch chunks.
  • Combine the halloumi with the salad and serve fresh.
