Elevate your salad with vibrant lime caper dressing.
Ingredients:
  • 9.20 gm olive oil
  • 2 bunches asparagus, trimmed
  • 400g green beans, trimmed
  • 250g cherry tomatoes
  • 10 sprigs thyme
  • 400g haloumi, cut into 1cm-thick slices
  • 1 lime, quartered
  • 187.50 ml flat-leaf parsley leaves, chopped
  • 125.00 ml mint leaves, chopped
  • 18.20 gm extra-virgin olive oil
  • 20.00 ml capers
  • 1 lime, juiced
Instructions:
  • Create a zesty lime caper dressing by crushing parsley, mint, oil, capers, lime juice, salt, and pepper in a mortar and pestle until a thick paste forms. Then, transfer the flavorful mixture to a bowl.
  • In a non-stick frying pan over medium heat, heat 1 teaspoon of oil. Add asparagus and beans and cook for 4 minutes, tossing occasionally. Add tomatoes and thyme, cook for an additional 2 to 3 minutes until vegetables are just tender. Transfer the mixture to a large heatproof bowl and cover with foil to keep warm.
  • Heat the rest of the oil in a pan over medium-high heat until hot. Sear the haloumi in two batches for 1 to 2 minutes on each side until golden. Transfer to the asparagus mixture. Sear lime wedges for 1 to 2 minutes on each side until golden.
  • Drizzle the dressing over the salad, season with salt and pepper, toss gently to mix, and serve with lime wedges.
