Savor smoky ham minestrone soup with garlic bread and Parmesan.
Ingredients:
  • 18.20 gm olive oil
  • 1 leek, white part only, thinly sliced
  • 2 garlic cloves, crushed
  • 500g pkt Vegetable Soup Kit
  • 1.2kg Smoked Meaty Ham Hock, skin removed, trimmed
  • 400g can diced tomatoes
  • 100g macaroni
  • 100g green beans, trimmed, cut into 4cm lengths
  • 62.50 ml flat-leaf parsley, finely chopped
  • 225g pkt Garlic Baguette
  • Grated parmesan, to serve
Instructions:
  • In a large deep saucepan over high heat, heat the oil until shimmering. Add the leek, garlic, and vegetables from the soup kit. Sauté while stirring for 5 minutes or until the vegetables start to soften.
  • Place the ham hock, stock powder sachet, 8 cups (2L) water, and tomato in a pot and bring to a boil. Reduce heat and simmer covered for 1 hour. Use tongs to move the ham hock to a plate and let it cool for 5 minutes. Shred the meat using two forks, discarding the bone. Enjoy!
  • Add the meat back to the pan with the macaroni and cook uncovered for 15 minutes, stirring occasionally. Then add the beans and cook for an additional 5 minutes until both the beans and macaroni are tender. Finish by stirring in the parsley.
  • Prepare the garlic bread as per the instructions on the package.
  • Ladle the soup into bowls, season to perfection, sprinkle with Parmesan, and enjoy with garlic bread.
