Transform leftover ham into a delicious salad with diced ham, eggs, relish, mayo, onion, celery, bell pepper, and mustard. Perfect for sandwiches or a standalone delight.
Ingredients:
  • 2 cups finely diced or ground ham (about 3/4 pound)
  • 3 hard-boiled eggs, chopped
  • 1/4 cup sweet pickle relish
  • 1/4 cup mayonnaise
  • 2 Tbsp minced green onion
  • 2 Tbsp minced celery
  • 2 Tbsp minced red bell pepper
  • 1 Tbsp chopped fresh parsley
  • 2 teaspoonDijon mustard
  • 1 Tbsp lemon juice
  • A large pinch of cayenne (optional)
  • Salt and black pepper to taste
Instructions:
  • In a large bowl, combine all ingredients except for salt, pepper, and cayenne. Adjust seasoning with salt, black pepper, and cayenne to your taste. Refrigerate until chilled.
  • Enjoy your delicious creation straight from the stove, or mix it into cooked macaroni for a creamy twist. Alternatively, pack it into a sandwich with your choice of bread - hamburger bun, slider roll, kaiser roll, regular bread, pita, or as a wrap. For the perfect pairing, serve with a refreshing glass of lemonade on a hot day.
