Spicy pepperjack cheese burgers with pico de gallo and guacamole, a delicious Mexican twist on a classic.
Ingredients:
  • 3 pounds ground beef
  • 3 onions, minced, divided
  • 1.5 cups bread crumbs
  • 1 pound shredded pepperjack cheese
  • 4 eggs
  • 2 tomatoes, chopped and juices strained
  • 2 bunches cilantro, chopped
  • 1 serrano chile pepper, minced, divided
  • 3 limes, juiced, divided
  • 5 avocados, peeled and pitted
  • 12 hamburger buns
  • 1 head iceberg lettuce, cored and shredded
Instructions:
  • Combine ground beef, remaining onions, bread crumbs, pepperjack cheese, and eggs in a bowl, then shape into 12 patties.
  • Mix ripe tomatoes, half of the leftover onion, fresh cilantro, half of the spicy serrano chile pepper, and half of the zesty lime juice together to create a vibrant pico de gallo. Refrigerate the mixture to let the flavors meld.
  • In a bowl, combine mashed avocados, the rest of the onions, the remaining serrano chile pepper, and the remaining lime juice to create guacamole. Season with salt and pepper to taste.
  • Sear burger patties in a hot skillet until cooked to your liking, about 3-5 minutes per side or until a thermometer inserted into the center reads 160°F (70°C).
  • Place a burger on each bun and add a dollop of guacamole, a handful of shredded lettuce, and a spoonful of pico de gallo on top of each.
