Spicy fish bites perfect for any seafood platter.
Ingredients:
  • 8 green onions, trimmed
  • 3cm piece fresh ginger, peeled, chopped
  • 3 garlic cloves, chopped
  • 76.25 gm fish sauce
  • 30.00 gm caster sugar
  • 2 tsp ground turmeric
  • 550g ling fish fillets, cut into 4cm pieces
  • 36.80 gm rice bran oil
Instructions:
  • Slice the white section of onions thinly, then cut the green section into 6cm lengths.
  • Pound sliced onion, ginger, and garlic in a mortar and pestle until a paste forms. Transfer the paste to a large bowl and add fish sauce, sugar, and turmeric. Stir well to combine, then season with pepper. Add fish and gently toss to coat. Cover and refrigerate for 1 hour.
  • Preheat the barbecue plate until sizzling hot. Grill the fish for 6 to 8 minutes until golden and fully cooked, then transfer it to a baking tray and cover with foil. Toss the green onion and half of the dill on the barbecue for 1 to 2 minutes until wilted. Add it to the fish and toss everything together.
  • Transfer to a large platter and garnish generously with the remaining dill. Serve with lemon wedges.
