Try this delicious dairy-free soup by removing the yogurt!
Ingredients:
  • 36.40 gm olive oil
  • 700g diced lamb (we used shoulder)
  • 2 garlic cloves, chopped
  • 44.40 gm tomato paste
  • 3.75 gm ground cumin
  • 5.00 gm sweet paprika
  • 1/2 tsp ground cloves
  • 1L (4 cups) beef style liquid stock
  • 2 x 400g cans chopped tomatoes
  • 1/2 bunch coriander, leaves finely chopped, plus extra leaves to serve
  • 2 x 400g cans chickpeas, rinsed, drained
  • 2 x 400g cans brown lentils, rinsed, drained
  • Thick Greek-style yoghurt, to serve
  • Toasted pita bread, to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Season the lamb and cook in batches, turning occasionally, until browned, about 4-5 minutes per batch. Remove from pan and set aside.
  • Sauté onion and garlic until softened. Add lamb back to the pan along with tomato paste, spices, bay leaf, stock, chopped tomato, and coriander. Simmer covered on low heat for 1 hour. Stir in chickpeas and lentils, then cook covered for 30 minutes. Uncover and cook for another 30 minutes until lamb is tender and soup thickens slightly.
  • Sprinkle with additional coriander and serve alongside yogurt and pita bread.
