Flavorful harissa chickpea stew over rice with eggs - a cozy comfort dish.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 teaspoons ras el hanout spice blend
  • 1 tablespoon harissa paste
  • 0.5 teaspoon salt
  • 1 (15 ounce) can fire-roasted diced tomatoes, undrained
  • 1 (15 ounce) can chickpeas, drained
  • 0.5 cup low-sodium vegetable broth
  • 0.25 cup chopped fresh cilantro
  • 3 cups hot cooked white basmati rice
  • 4 large eggs, cooked sunny side up
  • 1 pinch za'atar, or more to taste
Instructions:
  • In a saucepan over medium heat, sauté onion in oil until softened, roughly 2 minutes. Add garlic and stir until fragrant. Mix in ras el hanout, harissa, and salt for added flavor. Add tomatoes, chickpeas, and broth. Bring to a boil, then simmer covered for about 10 minutes. Finish by stirring in fresh cilantro before serving.
  • Present the flavorful stew on a bed of rice. Garnish with a perfectly cooked egg and a generous sprinkle of fragrant za'atar.
